Food Craft - Funky Face

BM # 42 Week 4 Day 3

Last week and the last day of BM # 42 and my theme continues with Edible Art.
I have to confess that if Valli would have asked us to do a mega marathon on this theme I would simply love it . This is such a beautiful theme , In fact my daughter in law is enjoying it too. She was disappointed when she knew I was doing only three posts on this theme. She has decided on getting creative and work on this we both ladies will not give up , Valli you can have this theme again and my posts shall be ready.
Coming to today's art. I have done a funky face, Since it's hot I decided that this face wears glares. Simple ingredients..
Remember to blanch the carrots else it is difficult to cut them in the required shape.

Food Craft - Teddy Sandwich

BM # 42 Week 4 Day 2

For the second day in the series of edible art I have created a teddy. Nutella spread is a favourite with kids and personally I love it too, this is one of the simplest possible sandwich you could ever make, and it will be gobbled down within fraction of minutes. Absolutely no need for me to tell you guys anything about it...just that I used
Wheat bread
So the kids get their fruit too along with bread and could try different variations and use
Chocolate chips
For that matter any fruit, just go wild with your imagination.

Food Craft - Open Fish Sandwich

BM # 42  Week 4  Day 1

For the last week of this marathon I picked one of my favorite themes, Edible art. I really enjoy any kind of art work whether it is paper or food. Getting creative with food can be very interesting. The options are umpteen, but I decided to pick open sandwiches to try my art.

Children like food which is appealing to the eyes just like any of us.They get bored with the same sandwiches and a little twist with a little imagination the children would be really delighted. In fact get the ingredients ready and let them play around, they will enjoy and laugh at what they create, plus eat everything without a fuss.
For the first day it is a fish for breakfast...a fish with juicy cucumbers.

Things needed
Bread slices
Hung curd / Butter

How to go about
Apply a nice layer of salted hung curd to the bread slice.
Slice the cucumbers, and then cut them into half, so you get semi circles.
Blanch the carrots lightly and then cut them into circles with the help of a cutter.
Follow the picture to get that fish and bubbles.
You can get innovative and make a complete aquarium .

Fruit Cream Pinwheel Sandwich

BM # 42  Week 3 Day 3  

Holidays are so much fun and they leave back some beautiful memories. This fruit cream sandwich immediately takes me back to Japan. While on my trip there my neice got amazing sandwiches from a place called Sandwich Factory.There were three four types but this cream one was the best and ever since I have thinking of trying and giving the sandwich a new avataar. So while working on my snack box theme for the 3rd day of the third week I made these pinwheel sandwiches filled with fresh whipped cream mango , banana and cherry.I packed these with a dipping sauce...and what better than chocolate ganache!

There is no recipe but I shall tell you how to go about..
What you need
Bread slices with sides trimmed.
Whipped cream
Chopped fruits

How to go about...
Using a rolling pin roll the bread slice a little thinner.
This will make it pliable .
Mix fruits with the whipped cream and apply a layer.
Gently roll up the slice, the filling might ooze out but never mind...just lick it up.
Taking a cling film, roll up the fruit roll and twist the edges tightly.
Place it in the frig to make it a little firm.
Remove after an hour, remove the cling film.
Cut into slices and dress them with a cherry.
Serve with Chocolate ganache.

Beet and Spinach Tikki

BM # 42 Week 3 Day 2

I had never tried beet root tikkis and when my daughter in law suggested to make these I wondered how they would taste.I was truly surprised to eat them as they were really very delicious, I could never think that this root which I use only for salads could give us such a healthy snack.We made the tikkis and they got over in seconds, I could not even think of clicking. Ever since they were on my mind and with the healthy lunch box theme I decided to make these in a mini version . I added spinach and rolled them in sesame seeds. Sesame gave it a wonderful crunch and spinach made it more healthy and colorful. Well this is a different version than the ones my daughter in law made but I shall definitely post her version too.

Coming to the recipe...
2 beet roots, boiled and grated
1 potato, boiled, mashed
Handful of finely chopped spinach
1 tsp ginger, garlic , chlly paste
1 slice bread , made into crumbs
Pinch garam masala
Few drops lemon juice
Salt to taste
Sesame seeds for rolling
Mix all ingredients very well, except for sesame seeds.
Pinch out small balls and make them into mini pattys.
Roll them in sesame seeds and shallow fry till crisp and golden.

Broccoli Tikki

BM # 42  Week 3  Day 1

We begin a new week and for this week I have chosen to cook healthy snack box recipes.We mothers are always in search of snacks that are healthy and easy to pack. The kids hate to take food which is messy. They just want to finish the snack box and run to play. Today I have made Broccoli Tikkis . These are simple to prepare, healthy and taste delicious . I have shallow fried them, as everything is cooked and I did not want to spoil the nutrition by deep frying.

250 gms Broccoli
2 Potatoes, boiled
1 tsp ginger garlic and green chilly paste
2 slices bread , crumbled
Pinch garam masala
Coriander leaves
Mint leaves
Salt to taste
Mix all the ingredients and mash well. shape into tikkis, you could choose the shape you like.
Shallow fry till golden.
Serve with mayo and some finely sliced cabbage, carrot and capsicum.

Cheesy Mice

BM # 42  Week 2  Day 3

As kids mom used to make these cheese rolls very often, at times she used to stuff potatoes.Its been years since I had these. Every one loves these but somehow I never get around making them, guess deep fried is the reason. These are actually sinful, also when you start eating you cant stop at just one. For the last day of  Easy Tiffin recipes we have these delicious Cheesey Mice to please the kids. Enjoy!!

What you need...
Bread slices with crust removed
Water to soak the bread in

Grated cheese
Green chilly
Coriander leaves
Mix everything and use as a stuffing.
The proportions can vary as per taste.

Remove the crust from the bread slices.
Soak the bread in water ...just for a few seconds.
Gently squeeze the water.
Place the stuffing in the center and bring the sides up to cover it.
Press lightly and form into rolls.
Deep fry to a golden.

To make the mice I used...
Almonds, cloves and cut out from cheese.

Teddy Burgers

BM # 42   Week 2  Day 2

Day 2 of Easy Tiffin theme and here is a burger . The burger is simple, with a vegetable patty , but the kids will fall in love with it. I made these while my grand kids were here , initially they did not want to eat, they just kept gazing but when they did they just loved it.
Not a very big recipe , you could use any patty, whatever you have on hand. I used mixed veggies and some spinach.

2 boiled potatoes, mashed
1/2 cup mixed vegetables, boiled
1/4 cup spinach, washed and finely chopped
2 tbsp bread crumbs
1 tsp ginger/garli/chilly paste
Salt to taste
Mix and mash all ingredients well with your hands.
Make patty according to your bun size.
Deep fry or shallow fry.

Assembling the burger
Slice the bun into two, apply butter.
Place a lettuce or cabbage (I did not have either of them )
Place the tomatoes and then place the patty.
Cover the bun .
Make eyes with olives, place a carrot or cheese slice, which can be cut into a round shape for nose.
Again use olives for that smile.
I made ears from a piece of other bun.

Pav Bhaji Frogs

BM # 42  Week 2 Day 1

We start with the second week and for this week I have chosen Easy Tiffins. .These recipes are for those in between times when you want to have a satisfying bite but not a meal. I am doing the edible art theme in the last week and some how while working on those got carried away so I am catering to kids this week , of course grown ups can indulge too.

For Day 1 I made these cute frogs . You could make a nice mix vegetable stuffing and stuff the pav with it along with salad. I am a great fan of Pav Bhaji so decided to stuff Pav Bhaji . But make sure this bhaji is quite dry , else it will keep popping out the minute you take a bite .

These are simple to make and what you need is
Bhaji / stuffing
Slit the pav, apply butter generously.Specially on the top .
Place some salad.
Place the bhaji.
Place a cucumber slice,for the tongue and make eyes with olives.

Cucumber Sandwich with Pink Lemonade for a Virtual Baby Shower

Sandwiches or stuffed toasts are the best and easiest breakfast one can choose from. A nice chilled drink or a cup of tea or coffee for the ones who like hot drinks, but for me it is always a chilled drink.Coming to today's post, I made this delicious Cucumber Sandwich from our BM friend Sapna's blog. No no, this is not a BM post where we are paired to cook...this is a special post  for a virtual baby shower which has been organized by the BM family. At BM we run a 3 day marathon every week and if you wish you can participate all four weeks, but two weeks are mandatory. Most of us at BM group have been participating since a very long time , and as such have become a family. Sapna has just moved in to Ireland and is about to have a baby. We cannot be with her to celebrate this joy , but surely we can express it and so here we are the BM family who join in to cook from her blog and post recipes all at a time. Sapna I hope you will love this Virtual Baby Shower.

I picked to make the banana dessert, but unfortunately the chocolate meted while I clicked the pics, so I decided to make this cucumber sandwich. Sapna has a delicious Pink Lemonade on her blog which caught my eye, but since the strawberry season has already passed by I made it with strawberry crush. Some how I did not want to miss that. The combo of these two was my breakfast and I totally enjoyed it. 

Coming to the recipes

Cucumber Cheese Sandwich
2 sandwich bread slices
2 tablespoon cheese spread
1 cucumber , sliced
1 tomato , sliced
Basil powder
Black pepper
Salt to taste
Apply cheese spread on bread slices
Arrange cucumber and tomato slices , sprinkle basil , salt and pepper.
Sandwich with the other slice .
Grill or toast in toaster or just warm it over non stick griddle.
Slice and serve warm with tomato ketchup and a chilled drink.
I served it with Pink lemonade.

Pink Lemonade
2 tsp Strawberry Crush
Juice of 1 lemon
Sprite or any lemony drink
Ice cubes
Take a nice clean glass with strawberry crush.
Add crushed ice.
Squeeze the lemon in it.
Pour a lemony drink and stir.

Paalak and Sprouts Chaat

BM # 42   Week 1   Day 3

I enjoy eating salads and try to find Indian and spicy versions but at the same time love to convert therm into chaats.These sprouts and paalak wadas are one such version. I dressed these sprouts with lots of curd, added some cucumbers, tomatoes, a wee bit of boiled potato and made this into a irresistible dinner. Potatoes do have carbs but boiled potato is a good carb if taken in moderation.This goes for the 3rd day under Low Carbs theme. There is no recipe as such, it is just the way you assemble the dish, totally according to your liking .

I have used..
Boiled moong sprouts
Boiled Potatoes
Beaten curd
Tomatoes, chopped
Onion, chopped
 Green Chutney
Red garlic chutney
Dry spices
Black salt
Peeli Mirch / Red chilly
Chaat masala
Farsaan sev
Coriander leaves
Green Chilly, chopped

Moong Daal Cheelas

BM # 41  Week 1   Day 2

We Indians are so used to eating rice or chapati for a meal that when we think of a No Carb Meal we still think on the lines of something filling.Well we have been off carbs for dinner for over a month now and inspite of having lots of options, the family prefers Indian food. 

Fotr the second day, under low Carbs theme I made these cheelas. These are made from Moong Daal which has been soaked and then grinded. The Cheelas have been made exactly the way we do dosas. I sauted some fresh peas and served with a diluted spicy chutney which served the purpose of sambar. I did not use any oil to make the cheelas crisp...just let them cook on slow fire .You could use some ghee or butter for the kids though. These are light, yet filling and delicious enough to satisfy the taste buds.

2 cups moong daal
Salt to taste
Wash and soak the daal for 2-4 hours.
Adding salt , grind the daal to a fine paste.
Heat a non stick gridle.
Pour a ladle full on it and rotate it clockwise, this will spread and become a big disc.
Cook on slow fire till the cheela becomes nice and crisp.


1 cup boiled green peas
1 tsp mustard seeds
1 green chilly finely chopped
Few curry leaves
1 onion, roughly chopped
2-4 tsp grated coconuts
Heat just a few drops of oil, just enough for the mustard to crackle.
Add green chillies, curry leaves and onions.
Give it a quick toss on full flame.
Add boiled peas, a pinch of salt.
You could add grated coconut.

1tbsp gram flour
1 cup curd
2-3 green chilly
Hand full mint
Salt to taste
Pinch black salt.
Mix all ingredients and blend in a mixer.
Pour in a pan , adding some water to adjust the consistency
and cook for 5-7 minutes, or till the raw smell of gram flour goes away.
Chill before serving.

Serving style
Serve the cheela along with chutney kadhi and sautéed peas.

No Grain Pizza

BM # 42 Week 1 Day 1 

A typical Asian-Indian vegetarian diet is rich in carbohydrates . Almost 70-75% of Indian diet is comprised of carbohydrates. Chapati, Bhakri, Rice, Sago, Potato- all these common Indian foods are rich in carbs. Nowadays the trend is to have a low carb diet for health benefits. Is it really true? Are all carbs bad in reality? To judge it better, let’s first understand what the basic types of carbs are-
Carbs are of 2 basic types:
1. Complex carbs- Complex carbs are mostly all high fiber foods like whole grains, brown rice, leafy vegetables, beans, salads, whole fruits etc. They are digested slowly; thus release energy at a steady pace. Hence these are good for health.

2. Simple carbs- These carbs are rapidly digested & absorbed thus provide our body with instant energy. They are found in all refined flours & bakery products, sago, potato, sweets, fruit juices, soft drinks, alcohol etc. Simple/ refined carbs are directly linked to weight gain & risk of diabetes.

If taken in excess, carbs (especially simple carbs) are converted to fats. So for this week I have chosen to give you carb free or low carb recipes. These are healthy and satisfy the taste buds as well as the tummy.

For Day 1 it is a No Grain Pizza. I made a base with black eyed beans and topped it with the regular pizza puree. The dressings are the same as the regular pizza and we could choose according to our taste. I used cottage cheese , though I did use a bit of mozzarella for the kids.The pizza was as delicious as the ones we normally have , so I did not get any complains even from kids.

For the base
1 cup black eyed beans, soaked and boiled
1 potato, boiled
1/4 tsp chilly flakes
1/4 tsp oregano
1/4 tsp basil
Salt to taste
Mix and mash all ingredients.
Shape into big patty and cook on slow fire a non stick griddle, making the patty crisp.

Chopped onions
Boiled corn
Grated cottage cheese

Place the patty.
Spread the puree.
Sprinkle the toppings.
Grate some cottage cheese.
Bake for 5- 10 minutes.
